Last summer I was picking up a couple of my grass-fed “veal-calves” from the butcher. In passing, he made the comment that I really must have poured on the grain. I replied that those calves have never seen an ounce of grain in their lives. I wish I had a video to capture his expression because his jaw dropped, and he was speechless. He went on to explain how these calves had marbling and back fat which was rare even with grain-fed veal calves… there is a way to do it well, but most ranchers have lost the know how after 50 years of raising grain-fed beef. We at Better Meats are trying to bring that knowledge back.
