How much meat can I expect to take home?
Hanging weight is calculated once the processor has removed the uneditable parts (the head, hooves, interior organs etc.), the carcass is then weighed. This is called the hanging weight.This weight is not the amount of meat you are going to take home. After all the processing, the meat that you take home can be up to 40% less than the carcass weight.
